Mother's Day was fabulous. The whole family met up in South Australia at a well known winery. It was also my sister's birthday.
A ploughman's lunch was front and centre - plenty of crusty sour dough bread, ham, pate, pork pies, chorizo sausage, cheeses and a variety of sweet, salty, sour and chilli pickles/relishes. Wines to match. ๐ค ๐ป

Thawing in the fridge waiting to be made into sausages tomorrow for a BBQ - pork and beef:
Pork shoulder and the cow's neck. The best cuts of the pig and cow for sausages IMO.
Fresh herbs.
Meaty! Umami flavours!

I found a book for Dad with full on old sausage recipes and sausage making written by an old Polish-American.
Dad went into full time production.
Best sausages I ever ate!

Of course making your own sausages you get to control the seasoning, including herbs, spices and salt plus fat content. We don't hold back.
Pork sausages will include cooked apple, fennel, white pepper and caramelized onions.
Beef sausages will include garlic, ground black pepper, sage, parsley and whole grain mustard.
Plenty of seasoning. Our own breadcrumb mix.
German potatoe salad. Sweet potatoes sliced and asparagus spears cooked on the bbq, along with onions.
An array of bbq and tomato sauces with varying spice levels. A gravy option too.

I made apple strudel to finish off the bbq. A delicious family recipe passed down.
Spiced, sweet bitey apples with plump rum-soakedย raisins, slithers of almonds with marzipan notes. Puff pastry that had the anticipated crunch.
Accompanied with vanilla ice cream.
